Selection
The thighs that are used come exclusively from pigs born, bred and slaughtered in Italy. These pigs must be “mature”, be at least 9 months old and not weigh less than 150 Kg.

Slaughterhouses and pig farms are chosen among the best ones. The thighs are accurately selected by our most skilled workers and those that are considered unsuitable for our quality standards, are returned to the slaughterhouse of origin.

This phase is extremely important as by starting with processing a high quality thigh leads to obtaining a top quality cured product, just like our hams.
