“Spiking” is the control that is performed on ham at 7 and 12 months from maturing, by using a special type of needle, made of a shin bone from a horse. This method is used to understand if the ham has been processed correctly and if it is good quality.It is a complex process that requires skill and special attention. It is performed by expert inspectors.

This control also takes place at the moment of shipping, before putting the Leporati brand on the ham, for a final control and to guarantee maximum safety to our customer.
